So it was a friend’s birthday this week, so I decided to try and emulate the BJ’s pizookie for her! Every year growing up there’d always be a birthday or two at BJs (a brewery and restaurant), and you know we ALWAYS had to get the pizookie at the end. For the unchristened, it is, as the name suggests, a pizza cookie! An 18” half-baked, gooey, cookie pie, topped with a few dollops of vanilla ice cream. HOO! Vanilla Ice Cream (Lactose Free😉 )
Cookie Dough:
- Flour
- Cocoa Powder
- Baking Soda
- Salt
- Butter
- Brown + Granulated Sugar
- Egg
- Milk
- Vanilla Extract
- Red Food Coloring
- Semi-sweet chocolate chips

Unfortunately, from the dietary restrictions I talked about in my last post I could only eat a bit of this, but got a few positive reactions from others! So I’ll take that a seal of approval. When I used the cast iron pan it actually cooked for too long, probably due to the residual heat from the pan. When I made the cookies later on, 350 for 8 minute was more than enough to leave it just solid on the outside, with a soft interior. But first experience baking cookies from scratch, not that bad! Just follow the instructions, and before you know it you’ll be at 900% of your daily sugar intake. 🙃
