Short one this week. Been pretty stressed with work so this is a quick little guy I saw a few years ago in this video. Hope you guys like it!

New York Strip: room temp pre-cook, salt and pepper rub, 4.5 min/side on cast iron
Chimichurri: Parsley, Cilantro, Garlic, Shallot, Oregano, Olive-Oil, Red Wine vinegar, S&P, Red Pepper Flakes(optional)

The Verdict
Overall 9/10
Another extremely low effort to high reward dish! The first time I had Chimichurri sauce was on a tri-tip sandwich at Twin Creeks Baseball complex when I used to play travel ball in 2009. Just as it did back then, the chimichurri cuts right through the UNCTUOUSNESS(my favorite word) of the steak. You really taste the acidity of the red wine vinegar, along with the garlic and shallots. But, along with the herbs, the olive oil really mellows everything out. As for the steak, 4.5 minutes/side in my cast iron pot and voila! Have a good week everyone!
