I just realized there’s only 6 weeks left to this year and it’s really sobering. Time really fucking flew by doing these recipes (and for other reasons), and I have yet to think about what I want to do for my finale. Great, more to stress about 😫
Anyways, did Loco Moco this week! I found out about this dish while running errands for work one day and just ordered something random from an unassuming Hawaiian BBQ restaurant in El Segundo. For the mac salad I used an egg pasta instead since I’ve been having gluten issues as y’all know. It didn’t turn out too shabby! Recipes for mac salad here, and I didn’t really follow any recipe for Loco Moco. I just pieced it together from random youtube videos.
The Recipe
White Rice
Beef Patties: I used 80/20
Gravy: Onion, Mushrooms, Beef Stock, Flour, Salt and Pepper to taste
Sunny-side Up Egg
Green Onion
Macaroni Salad:
Macaroni: Here I used egg-pasta instead to cut some gluten. Use the real thing
Mayonnaise
Celery, Onion, Carrots all grated
Salt and Pepper to taste
Lime Juice
Cayenne Pepper

The Verdict
Overall 9/10
It’s just so easy, hearty, and satisfying. Gravy is just adding stock/flour back and forth until you get the right consistency, then seasoning to taste. The way I do my sunny-side up egg is to first get the oil medium hot. Then, drop in the egg (hopefully you hear a mild sizzling), and drop the heat as low as the burner will go. I’ll let it sit here until I don’t see anymore translucent whites, and there you go!
I think I would season the gravy a bit more; It was slightly bland. I’d also be interested in just saying screw it and use real elbow macaroni. The egg pasta just wasn’t the same. Lastly I think the dish overall lacks some acid. It feels fairly heavy to eat with all the meat and cholesterol. I craved some palette cleanser to lighten it up.
As I write this it’s Sunday, and I have enough materials to make this meal a few more times, since it’s comprised of such fundamental ingredients. This was a fun one! 6 more weeks, here we go!
