It literally translates to chive boxes. LOL which admittedly does not sound very appetizing at all. It’s a pan-fried egg and chive pancake. Herbaceous, savory, with a crispy outside and chewy inside, these are a staple of Chinese cuisine. Took a lot of inspiration from my mom for this recipe, but she also got lazy and sent me a recipe. I followed that one pretty closely but you’re welcome to add other stuff in your filling as well! Be creative (But then it won’t be authentic so 😐)

Ingredients
Chinese Chives (not the small thin ones from Ralphs, go to Ranch 99 for the bundles)
Scrambled Eggs
Vermicelli
Soy Sauce, Sesame Oil, Salt, Pepper all to taste
Dough: Flour, Yeast, Water
Process

After the final rest, form it into a ring and cut it into six equal pieces! (forgot pictures)

The Verdict
Overall 9/10
Such a high score since I was so taken aback by how easy this was. Like the longest part was the dough, and that was only about 20 minutes of actual work. The rest was just waiting around. As I said before you have plenty of freedom to customize your filling. I kept things traditional, but it’s essentially a blank canvas. Now that I think about it it’s like an asian empanada. You can literally put anything in there. ( Except for all the stress and pain you’re feeling from recent global and national events 🙂 )
